It’s fun to celebrate holidays, experience and taste the cultures, traditions and recipes of other countries…especially if those involve tacos and margaritas! Today I am sharing some low carb ways to partake in the Cinco de Mayo festivities.
You are going to LOVE the cool refreshing Keto Margarita Pie and how easy it is to pull this fiesta together quickly!
You can prepare your taco meat while you arrange your toppings on a board. This board is great with a small raised edge like a very shallow bowl. I use it all the time for charcuterie boards and as a tray in my decor.
All you need to do to make these crispy air fryer chips is to cut up a package of low carb tortillas (Mission brand Carb Balance works best for this) into triangles, then brush both sides with olive oil and sprinkle with sea salt. Set Air Fryer to 360 F, and cook half the triangles for 10-12 minutes, repeat for the remaining half.
When I make up a recipe, I don’t usually expect it to be just right or even good on the first try, but this one was AMAZING straight out of the gate. I don’t know if you can go wrong here. There’s no baking at all, not even the crust! Just put it together and let it chill! It’s cool, refreshing, tart, and sweet! It does have a tiny bit of tequila which “doesn’t get cooked off” (since there’s no baking). If you’d rather leave out the tequila, the pie will still be fantastic!
This Keto Margarita Pie may be the quickest, easiest pie I’ve ever made! No baking, no joke! And it is SO refreshingly delicious!
This is the perfect dessert for Cinco de Mayo, or any warm summer day…definitely a recipe to save for many future uses!
If you don’t have the powdered version of a sugar substitute, you can use a clean coffee grinder to process the granulated version into powdered/confectioners. Measure after processing.
